“I always have looked to find fun in the kitchen since I have seen Julia Child TV shows and having the chance to working with her in Boston. I am a self-educated cook, trained by Michelin-starred Chefs for many years. Today my goal is to teach people to eat better through well-balanced menus prepared with fresh seasonal (organic if possible) produce only. For years, I have simplified hundreds of recipes celebrating the French cuisine for home cooks. In a word, no need to be an advanced cook to join my classes”, explains Corinne.
Normandy is well known for its dairy produce (delicious butter and heavy cream, flavorful cow-milk cheeses such as Camembert, Pont Levêque and Livarot), cider, Calvados brandy, exquisite desserts but also good meat and delicate fish.
Rural Normandy areas feature lors of artisans who keep the traditions alive. Aside to your cooking lessons, you will visit producers who make delights such as milk jam, salty-buttered caramel candies, buttered biscuits and shortbreads, etc. You will have the chance to meet local producers on the food markets and in the farms.
Cooking with Corinne in Normandy tour includes 3 cooking classes scheduled in the morning or in the afternoon. Within 3 hours you will learn how to prepare and to cook a 3 to 4-course meal including appetizer, starter, main course, pastry, dessert that you will enjoy afterwards.
One class will celebrate fish, the second one: meat, and the third once: poultry. Aperitif and tasting lunch and dinner accompanied by wine, cider, mineral water, coffee or herbal tea follow each class. Sample menus can include walnuts and Calvados flavored countryside pâté, Livarot cheese choux puffs (exquisite for the aperitif), chicken Made-in-Normandy, rack of lamb topped with herbs crust, sole normande, caramelized apple tarts, seasonal fruits clafoutis, etc. Please remind that Corinne creates the menus according to her guests’ likes, dislikes, food restriction or allergies. That’s why it’s important that you mention it on the reservation form you will complete.
